Banana Sweet Potato Scone Bread
This is a very thick, dense bread, almost like a large scone.
It is a vegan recipe.  Taste tested and approved!
one very ripe banana
one sweet potato cooked thoroughly
1/4 cup brown sugar
1/2 cup vanilla soy milk
one lemon, cut in half
1.5 cups white whole wheat flour
one teaspoon baking soda
one teaspoon baking powder
teaspoon + of cinnamon
.5 teaspoon nutmeg

-heat oven to 400 degrees
- squeeze half of lemon into the soy milk ( it will curdle, this is good)
-in a mixing bowl, mash banana and sweet potato into a well moistened paste, then combine other wet ingredients and mix. Squeeze lemon into the mix.
-in a separate mixing bowl, combine all dry ingredients
- mix dry ingredients into the wet until it is consistent and a thick dough, add more soy milk if it seems far too dry and crumbly
- spray baking pan with cooking spray and place dough in center, shaping it into a loaf
- peel lemon rind and place on top ( I put walnuts on top of mine as well) dust top  with cinnamon
- bake 20-25 minutes
